I love trying new recipes. The other day, Tim's dad and brother came down for a visit. I wanted to prepare dinner for them when they were here, so I pulled out the January and February 2010 issue of Cooks Illustrated. Tim's brother saw the Chicago style Deep Dish pizza article and immediately told me that he wanted to try it. I was so excited to start cooking! We started the dough on Tuesday; unfortunately, I found out that the dough needed to rise twice, and Tim’s dad and brother were so hungry and tired from the drive that they weren’t willing to wait until later that evening. I despondently put the dough in the refrigerator and waited to prepare the masterpiece another day. Thankfully on Thursday evening I had the opportunity to finally finish the dish and share it with Rob and Kristina – It was AWESOME.

Graduation and Anniversary
Graduation
Wow, I'm excellent at keeping things current. Please forgive me for not being a faithful blogger, but I hope that will change since I have some more time on my hands. I finally finished my Bachelors of Science degree at San Diego State University in Foods and Nutrition.
I actually had these pictures taken before I crossed the stage from my friend Myda Clark. I am very glad I did because the professional photographer that took the pictures at graduation made me look like a deer caught in headlights. I mean I had less than 30 seconds to stand in the right area before I had to look up and have my photo taken. It is definitely one of my worst photos ever... I won't be sharing that one... Sorry guys.
I am so glad to be done with my degree! Now I can now have the evenings all to myself and I don't have to worry about homework. Before you ask what my next next step is, I'm not sure exactly. I am kinda waiting to see what Tim's next step will be. I am currently working at San Diego State University in the Enrollment Services, and that keeps me busy for now.

Tim and I battled an epic battle of paper, scissor, rock to get Fast Passes to this ride. We had to draw a truce when we were on our 6th round and neither of us could beat each other.
On the evening of our anniversary, we decided to go classy and eat at a nice restaurant, Ruth's Chris.
The steaks were delicious and when they brought out our dessert they wrote on our plate
"Happy Anniversary" in chocolate
It was a wonderful anniversary and I am so glad being married to a wonderful man. I Love You Tim!!!

Mud Run
Ok as you all know I'm terrible at blogging, well actually the problem is that I don't blog. So here is my recent adventure to start off my summer. It all started in December when Tim's aunt Cathleen asked me if I would like to join her team to do the Mud Run, and for an opportunity like that I jumped on it right away. A week after she informed me that the spot I would have was already taken and she forgot :(. About 2 months ago a few of her team mates opted out, and unfortantly Cathleen coundn't do it, due to her shoulder injury, I was back on the team.

June 13th was the exciting day of fun filled mud, though I thought. The first 4 miles was running up hills and through two little streams, and no mud. I saw all of those pictures of people covered in mud and I have no clue how they are so muddy cause by now I'm still clean. We get to our first mud pit, and now here's the mud and climb a 5 foot wall, with some assistance :). I'm pretty stoked of getting muddy now, but wait what is ahead of us is resivours that we have to cross. The water was up to my chest, which isn't hard to get to, and so all that mud I acuumulated just before is washed off. Bummer. We repeat the mud pit and wall and we climb a steep muddy hill. Thinking that we were practicly done, I was pretty dissapointed for the lack of mud accumulation. Getting close to the finished line there it was the prime jewel, the mud crawl. Now I see where all the mud comes from. Crawling through the mud and under flags was pretty sweet, but not exactly fun when the flags seemed like they were getting closer and closer to the muddy watter. And popping right out of that last opsticle we are done, link our team arms and we crossed that finished line. I'm very greatful for the patience of the team members waiting for Jessica and Me.

Pride and Prejudice...AND ZOMBIES!!!!

Charlotte has to work a whole lot in a boring area where she files all day and sends out accptance letters for SDSU. While she works, she listens to music and various podcasts. One of these podcasts is a news show called "Wait, Wait, Don't Tell Me." On the show, they talked about one of the most beloved classic novels of all time, Pride and Prejudice. However, this novel contains an interesting twist, IT HAS ZOMBIES!!!!
Personally, I've never found Pride and Prejudice very interesting, but NOW it is numero uno on my MUST READ list. Just reading the description of the book made me laugh so hard that I nearly wet myself. It seems that they take the original story of Pride and Prejudice written completely by Jane Austen where Elizabeth Bennett (the main character of Pride and Prejudice) is courted by the annoying Mr. Darcy, then they throw in a few pages by Seth Grahame-Smith of Elizabeth Bennett slaughtering zombies.
This book is going to be EPIC, it is a must buy and I am going to spread the word of it's awesomeness until I read it and am find out whether I was selling a crappy book or promoting the best modern masterpiece of our century!!

So Tim and I have been on a hunt for couch's for several months now. A few weeks ago we received a love sack from Joann which kept us at bay until we find "The" couch. Just yesterday we decided we don't need a couch that bad, until today. We just moved into a bigger place with two rooms and we need some organizers for our closet and that was it. Once we entered Ikea we walked past the couches and had to sit on all of them to keep our eyes open, and we wrote down the one we liked for the future referencing. We went through Ikea and grab the closet organizer and that was it and were heading towards the checkout line until I mentioned that we should look at "As Is" stuff and lo and behold there was the exact couch we wanted and a hundred dollars off. So we Had to buy, and it now lays in our front room.
